Vegan Leek Rice

Vegan Leek Rice

Ingredients:
½ cup brown rice, uncooked
1 ¼ cup hot water
1 ½ tsp tomato paste
1 ½ tbsp dill, chopped
1/3 cup olive oil
1 lb leeks, sliced
Pepper
Salt
Directions:
Add sliced leek in boiling water and cook for 2-3 minutes. Strain and set
aside.
Heat oil in a saucepan over medium-low heat.
Add leek and sauté until softened, about 5-7 minutes.
Add tomato paste and dill and cook for 1-2 minutes.
Add hot water, rice, pepper, and salt and stir well.
Cover the saucepan with a lid and simmer over low heat for 20 minutes.
Serve and enjoy.
