Tomato Pasta Fagioli

3 oz red kidney beans, canned
1 teaspoon tomato paste
7 oz quinoa pasta
1 tomato, chopped
1 teaspoon olive oil
¼ yellow onion, diced
1/3 carrot, chopped
1 teaspoon almond butter
1 cup water, for cooking
Place almond butter in the skillet and melt it.
Add chopped carrot, tomato, and yellow onion. Cook the vegetables for 7
minutes over the medium heat. Stir them from time to time.
Meanwhile, bring the water to boil. Add quinoa pasta and cook it for 2
minutes over the medium heat. Drain the water.
Add pasta in the vegetable mixture.
Then add tomato paste, red kidney beans, and olive oil.
Cook the pasta for 5 minutes over the high heat. Stir it with the help of the
spatula every 1 minute.
