Spiced Soup with Lentils & Legumes

Serving Size: 1-cup
2-tbsp extra-virgin olive oil
2-cloves garlic, minced
4-pcs large celery stalks, diced
2-pcs large onions, diced
6-cups water
1-tsp cumin
¾-tsp turmeric
½-tsp cinnamon
½-tsp fresh ginger, grated
1-cup dried lentils, rinsed and sorted
1-16-oz. can chickpeas (garbanzo beans), drained and rinsed
3-pcs ripe tomatoes, cubed
½-lemon, juice
½ cup fresh cilantro or parsley, chopped
Heat the olive oil and sauté the garlic, celery, and onion for 5 minutes in a
large stockpot placed over medium heat.
Pour in the water. Add the spices and lentils. Cover the stockpot and simmer
for 40 minutes until the lentils are tender.
Add the chickpeas and tomatoes. (Pour more water and additional spices, if
desired.) Simmer for 15 minutes over low heat.
Pour in the lemon juice and stir the soup. Add the cilantro or parsley and salt
to taste.
