Spiced Chickpeas Bowls

15 ounces canned chickpeas, drained and rinsed
¼ teaspoon cardamom, ground
½ teaspoon cinnamon powder
1 and ½ teaspoons turmeric powder
1 teaspoon coriander, ground
1 tablespoon olive oil
A pinch of salt and black pepper
¾ cup Greek yogurt
½ cup green olives, pitted and halved
½ cup cherry tomatoes, halved
1 cucumber, sliced
Spread the chickpeas on a lined baking sheet, add the cardamom, cinnamon,
turmeric, coriander, the oil, salt and pepper, toss and bake at 375 degrees F
for 30 minutes.
In a bowl, combine the roasted chickpeas with the rest of the ingredients, toss
and serve for breakfast.
