Shrimp and Lemon Sauce

Shrimp and Lemon Sauce

Servings: 4
1-pound shrimp, peeled and deveined
1/3 cup lemon juice
4 egg yolks
2 tablespoons olive oil
1 cup chicken stock
Salt and black pepper to the taste
1 cup black olives, pitted and halved
1 tablespoon thyme, chopped
In a bowl, mix the lemon juice with the egg yolks and whisk well.
Heat up a pan with the oil over medium heat, add the shrimp and cook for 2
minutes on each side and transfer to a plate.
Heat up a pan with the stock over medium heat, add some of this over the egg
yolks and lemon juice mix and whisk well.
Add this over the rest of the stock, also add salt and pepper, whisk well and
simmer for 2 minutes.
Add the shrimp and the rest of the ingredients, toss and serve right away.
