Salmon and Mango Mix
Preparation time: 10 minutes
Cooking time: 25 minutes

Ingredients:
2 salmon fillets, skinless and boneless
Salt and pepper to the taste
2 tablespoons olive oil
2 garlic cloves, minced
2 mangos, peeled and cubed
1 red chili, chopped
1 small piece ginger, grated
Juice of 1 lime
1 tablespoon cilantro, chopped
Directions:
In a roasting pan, combine the salmon with the oil, garlic and the rest of the
ingredients except the cilantro, toss, introduce in the oven at 350 degrees F
and bake for 25 minutes.
Divide everything between plates and serve with the cilantro sprinkled on
top.
