This summery salad is perfect for hot evenings when you don’t feel like cooking inside. This salad has so much flavor with watermelon, feta cheese, cilantro, red onion and spices! Makes 4 servings , 24 minutes time .

– 2 cups salad greens (I like salad mix that has spinach)

– 1 cup watermelon, cubed

– ½ cup red onion, sliced thin

– 2 tbsp. cilantro, chopped

– ½ cup feta cheese (optional)

Since this salad is light and fresh tasting it goes well with a number of different main courses such as fish or chicken. I love to enjoy this salad with baked tilapia . Serve salad immediately after preparing each layer – do not wait for layering all the ingredients together because the salad will get soggy! Layered Greek salad can be made up to 3 hours before serving.

Grilled chicken is always healthy and delicious so why not make an amazing salad out of it? This salad has grilled chicken, grapes, apples, crunchy pecans and a light salad dressing for a salad that tastes as good as it is good for you.

– 2 cups salad greens (I like salad mix that has spinach)

– 1 cup chicken breast, grilled and cubed

– ½ cup green grapes, sliced in half

– 1 apple cored and diced small

– ¼ cup pecans, chopped roughly

Balsamic Vinaigrette Recipe For Dinner

– 4 tbsp. balsamic vinegar

– 3 tbsp. extra virgin olive oil

– 2 tsp dijon mustard

– salt and pepper to taste Blend all ingredients together until emulsified.

This salad is one of my favorites because it tastes just like fajitas but in salad form! The smokiness from the chicken combined with the sweetness from the peppers and onions all tossed together in salad dressing makes for salad that is to die for.

Makes 6 servings , 25 minutes time .

– 4 cups salad greens (I like salad mix that has spinach)

– 1 sweet yellow bell pepper, sliced thin

– ½ red onion, diced small

– 2 cups chicken breast, grilled and cubed (you can use store bought rotisserie chicken if you are short on time)

– 1 cup salsa verde (or any green salsa of your choosing)

– salad dressing (feel free to use your favorite salad dressing or make a salad dressing out of olive oil and balsamic vinegar)               

  Grilled Chicken And Asparagus Recipe For Dinner

If you haven’t tried cooking with asparagus you are missing out. It is delicious and it makes the perfect salad topper!

Makes 4 servings, 20 minutes time .

– 2 cups salad greens (I like salad mix that has spinach)

– 1 cup asparagus, roasted in the oven at 400 degrees for 10 minutes with a drizzle of olive oil and salt and pepper to taste

       – ½ red onion, sliced thin

– 1 green apple cored and cut into cubes

This salad also goes well with baked fish or any meat dish that doesn’t have strong flavors so that the salad can shine through.

This salad recipe for dinner is my favorite because it tastes just like a big pile of broccoli and cheese all dressed up in salad dressing. The broccoli gives the salad an incredible crunch that everyone will love and if you are really set on making this salad you can even add bacon to it, although I find the flavor of the salad dressing enough without it. 

Makes 8 servings, 10 minutes time .

– 4 cups salad greens (I like salad mix that has spinach)

– 1 cup broccoli florets

– ½ cup salad dressing (I like to make salad dressing out of olive oil and balsamic vinegar)

– ¼ cup shredded cheese

This salad is great with grilled chicken or steak . I also love to serve this salad with baked salmon .
