1 cup quinoa, cooked
6 eggs, whisked
Salt and black pepper to the taste
1 cup Swiss cheese, grated
1 small yellow onion, chopped
1 cup white mushrooms, sliced
½ cup sun-dried tomatoes, chopped
In a bowl, combine the eggs with salt, pepper and the rest of the ingredients
and whisk well.
Divide this into a silicone muffin pan, bake at 350 degrees F for 30 minutes
and serve for breakfast.
