Quinoa and Eggs Pan

Cooking time: 23 minutes
Servings: 4
4 bacon slices, cooked and crumbled
A drizzle of olive oil
1 small red onion, chopped
1 red bell pepper, chopped
1 sweet potato, grated
1 green bell pepper, chopped
2 garlic cloves, minced
1 cup white mushrooms, sliced
½ cup quinoa
1 cup chicken stock
4 eggs, fried
Salt and black pepper to the taste
Heat up a pan with the oil over medium-low heat, add the onion, garlic, bell
peppers, sweet potato and the mushrooms, toss and sauté for 5 minutes.
Add the quinoa, toss and cook for 1 more minute.
Add the stock, salt and pepper, stir and cook for 15 minutes.
Divide the mix between plates, top each serving with a fried egg, sprinkle
some salt, pepper and crumbled bacon and serve for breakfast.
