Mushrooms Peas Farro

Ingredients:
1 cup Italian pearled farro
¼ cup fresh mint leaves, chopped
½ cup parmesan cheese, grated
2 ¼ cup vegetable broth
2 thyme sprigs
1 tsp paprika
1 tsp garlic, minced
1 cup frozen peas
8 oz mushrooms, sliced
¼ cup green onions, chopped
2 tbsp olive oil
Pepper
Salt
Directions:
Heat oil in a saucepan over medium-high heat.
Add peas, mushrooms, and green onions and sauté for 3-4 minutes. Add
garlic sauté for 30 seconds.
Add faro, thyme, paprika, pepper, and salt and sauté for 4-5 minutes.
Add broth and stir everything well. Bring to boil.
Turn heat to medium-low. Cover and cook for 20 minutes or until all liquid is
absorbed.

Remove saucepan from heat.
Add mint leaves and parmesan cheese and stir well.
Serve and enjoy.
