Mini Frittatas

Ingredients:
1 yellow onion, chopped
1 cup parmesan, grated
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 zucchini, chopped
Salt and black pepper to the taste
8 eggs, whisked
A drizzle of olive oil
2 tablespoons chives, chopped
Directions:
Heat up a pan with the oil over medium-high heat, add the onion, the
zucchini and the rest of the ingredients except the eggs and chives and sauté
for 5 minutes stirring often.
Divide this mix on the bottom of a muffin pan, pour the eggs mixture on top,
sprinkle salt, pepper and the chives and bake at 350 degrees F for 10 minutes.
Serve the mini frittatas for breakfast right away.
