Mediterranean Macaroni with Seasoned Spinach

2-tbsp olive oil
2-cloves garlic, minced
1-pc yellow onion, diced
Pinch of salt
10-oz. fresh baby spinach
2-pcs fresh tomatoes, diced
¼-cup skim mozzarella cheese, shredded
½-cup crumbled feta cheese
½-cup white cheddar cheese, cubed
1-cup low-sodium vegetable broth
2-cups elbow whole-grain macaroni
1-cup unsweetened almond milk
½-tsp organic Italian Seasoning
Salt and freshly ground pepper
Parsley for garnish

  1. Heat the olive oil in a large pan placed over medium-high heat. Add the
    garlic, onions, and a pinch of salt, and sauté for 3 minutes until tender.
  2. Add the spinach, tomatoes, cheese, vegetable broth, macaroni, milk, and
    seasonings. Mix well until fully combined. Bring the mixture to a boil,
    stirring frequently.
  3. Reduce the heat to medium-low, and cover the pan. Cook further for 15
    minutes until the pasta cooks through, stirring every 3 minutes to prevent the
    pasta mixture from sticking on the pan’s surfaces.
  4. Remove the pasta from the heat and stir. To serve, garnish the pasta with
