Mahi Mahi and Pomegranate Sauce

1 and ½ cups chicken stock
1 tablespoon olive oil
4 mahi mahi fillets, boneless
4 tablespoons tahini paste
Juice of 1 lime
Seeds from 1 pomegranate
1 tablespoon parsley, chopped
Heat up a pan with the oil over medium-high heat, add the fish and cook for 3
minutes on each side.
Add the rest of the ingredients, flip the fish again, cook for 4 minutes more,
divide everything between plates and serve.
