Lemon Pepper Red Bean Salad

Serve: 3
2 cups kidney beans, drained and rinsed
2 garlic cloves, minced
1 carrot, diced
2 tbsp nutritional yeast
¼ cup fresh parsley, chopped
1 small onion, diced
2 lemon juice
¼ tsp pepper
½ tsp salt
Add all ingredients into the large mixing bowl and toss well.
Place in refrigerator for 1 hour.
Serve chilled and enjoy.
