Lemon Orzo Salad

12 oz whole wheat orzo pasta
¼ cup olive oil
1 lemon juice
1 cup fresh mint leaves, chopped
1 cup fresh basil leaves, chopped
½ small onion, diced
1 cucumber, diced
14.5 oz can chickpeas, rinsed and drained
3 cups baby spinach, chopped
Cook pasta according to the packet instructions. Drain well and place in a
large mixing bowl.
Add remaining ingredients to the bowl and toss well.
Season salad with pepper and salt.
Serve and enjoy.
