Healthy Carrot Salad

Ingredients:
1 lb carrots, peeled and grated
1 tsp garlic, minced
1 tbsp lemon zest
¼ cup fresh lemon juice
2 tbsp olive oil
¼ tsp cinnamon
1 tsp cumin
1 tsp sweet paprika
¼ cup fresh cilantro, chopped
¼ cup fresh parsley, chopped
½ cup fresh mint, chopped
Pepper
Salt
Directions:
Add all ingredients into the mixing bowl and mix until well combined.
Serve and enjoy.
