9 ham slices
5 eggs, whisked
1/3 cup spinach, chopped
¼ cup feta cheese, crumbled
½ cup roasted red peppers, chopped
A pinch of salt and black pepper
1 and ½ tablespoons basil pesto
Grease a muffin tin with cooking spray and line each muffin mould with 1
and ½ ham slices.
Divide the peppers and the rest of the ingredients except the eggs, pesto, salt
and pepper into the ham cups.
In a bowl, mix the eggs with the pesto, salt and pepper, whisk and pour over
the peppers mix.
Bake the muffins in the oven at 400 degrees F for 15 minutes and serve for
