Halibut Pan

Halibut Pan
Preparation time: 10 minutes

Servings: 4
4 halibut fillets, boneless
1 red bell pepper, chopped
2 tablespoons olive oil
1 yellow onion, chopped
4 garlic cloves, minced
½ cup chicken stock
1 teaspoon basil, dried
½ cup cherry tomatoes, halved
1/3 cup kalamata olives, pitted and halved
Salt and black pepper to the taste
Heat up a pan with the oil over medium heat, add the fish, cook for 5 minutes
on each side and divide between plates.
Add the onion, bell pepper, garlic and tomatoes to the pan, stir and sauté for 3
Add salt, pepper and the rest of the ingredients, toss, cook for 3 minutes
more, divide next to the fish and serve.
