Halibut and Quinoa Mix

Cooking time: 12 minutes
Servings: 4
Ingredients:
4 halibut fillets, boneless
2 tablespoons olive oil
1 teaspoon rosemary, dried
2 teaspoons cumin, ground
1 tablespoons coriander, ground
2 teaspoons cinnamon powder
2 teaspoons oregano, dried
A pinch of salt and black pepper
2 cups quinoa, cooked
1 cup cherry tomatoes, halved
1 avocado, peeled, pitted and sliced
1 cucumber, cubed
½ cup black olives, pitted and sliced
Juice of 1 lemon
Directions:
In a bowl, combine the fish with the rosemary, cumin, coriander, cinnamon,
oregano, salt and pepper and toss.
Heat up a pan with the oil over medium heat, add the fish, and sear for 2
minutes on each side.
Introduce the pan in the oven and bake the fish at 425 degrees F for 7
minutes.
Meanwhile, in a bowl, mix the quinoa with the remaining ingredients, toss
and divide between plates.
Add the fish next to the quinoa mix and serve right away.
