Grilled Eggplant

Ingredients:
2 large eggplants, sliced ¼-inch thick
½ lemon juice
2 tbsp fresh parsley, chopped
¼ cup feta cheese, crumbled
¼ tsp chili flakes
1 tsp dried oregano
½ cup olive oil
Pepper
Salt
Directions:
Heat grill pan over medium-high heat.
In a small bowl, mix together oil, chili flakes, and oregano.
Brush eggplants with oil mixture and season with pepper and salt.
Place eggplant slices in a grill pan and cook for 3 minutes per side.
Transfer grill eggplant slices on serving dish. Drizzle with lemon juice.
Top with feta cheese and parsley.
Serve and enjoy.
