Flavorful Roasted Vegetables

1 eggplant, sliced
5 fresh basil leaves, sliced
2 tsp Italian seasoning
2 tbsp olive oil
1 onion, sliced
1 bell pepper, cut into strips
2 zucchini, sliced
2 tomatoes, quartered
Preheat the oven to 400 F/ 200 C.
Line baking tray with parchment paper.
Add all ingredients except basil leaves into the mixing bowl and toss well.
Transfer veggie mixture on a prepared baking tray and roast in preheated
oven for 30 minutes.
Garnish with basil leaves and serve.
