Creamy Curry Salmon

2 salmon fillets, boneless and cubed
1 tablespoon olive oil
1 tablespoon basil, chopped
Sea salt and black pepper to the taste
1 cup Greek yogurt
2 teaspoons curry powder
1 garlic clove, minced
½ teaspoon mint, chopped
Heat up a pan with the oil over medium-high heat, add the salmon and cook
for 3 minutes.
Add the rest of the ingredients, toss, cook for 15 minutes more, divide
between plates and serve.
