Creamy Carrot Soup
Servings: 6
Preparation time: 10 minutes
Cooking time: 45 minutes
2 lbs carrots, peeled and sliced
4 garlic cloves, chopped
2 leeks, sliced
2 tbsp olive oil
4 cups vegetable stock
1/2 tsp ground cumin
1/4 tsp ground coriander
Heat olive oil in a saucepan over medium heat.
Add carrots, cumin, coriander, garlic, leek, pepper, and salt and cook for 15
Add stock and stir well. Bring to boil.
Turn heat to low and simmer for 30 minutes.
Puree the soup using an immersion blender until smooth.
Serve and enjoy.
