Cod and Mushrooms Mix

Servings: 4
Ingredients:
2 cod fillets, boneless
4 tablespoons olive oil
4 ounces mushrooms, sliced
Sea salt and black pepper to the taste
12 cherry tomatoes, halved
8 ounces lettuce leaves, torn
1 avocado, pitted, peeled and cubed
1 red chili pepper, chopped
1 tablespoon cilantro, chopped
2 tablespoons balsamic vinegar
1 ounce feta cheese, crumbled
Directions:
Put the fish in a roasting pan, brush it with 2 tablespoons oil, sprinkle salt and
pepper all over and broil under medium-high heat for 15 minutes.
Meanwhile, heat up a pan with the rest of the oil over medium heat, add the
mushrooms, stir and sauté for 5 minutes.
Add the rest of the ingredients, toss, cook for 5 minutes more and divide
between plates.
Top with the fish and serve right away.
