Catfish Fillets and Rice

Ingredients:
2 catfish fillets, boneless
2 tablespoons Italian seasoning
2 tablespoons olive oil
For the rice:
1 cup brown rice
2 tablespoons olive oil
1 and ½ cups water
½ cup green bell pepper, chopped
2 garlic cloves, minced
½ cup white onion, chopped
2 teaspoons Cajun seasoning
½ teaspoon garlic powder
Salt and black pepper to the taste
Directions:
Heat up a pot with 2 tablespoons oil over medium heat, add the onion, garlic,
garlic powder, salt and pepper and sauté for 5 minutes.
Add the rice, water, bell pepper and the seasoning, bring to a simmer and
cook over medium heat for 40 minutes.
Heat up a pan with 2 tablespoons oil over medium heat, add the fish and the
Italian seasoning, and cook for 5 minutes on each side.
Divide the rice between plates, add the fish on top and serve.
