Caprese Pasta Salad

15 oz brown rice pasta
1 tbsp fresh lemon juice
1 tbsp garlic, minced
2 tbsp olive oil
¼ cup balsamic vinegar
1 avocado, chopped
1 cup fresh basil, chopped
8 oz cherry tomatoes, halved
¼ tsp pepper
½ tsp salt
In a small bowl, mix together lemon juice, garlic, oil, vinegar, pepper, and
salt and set aside.
Cook pasta according to the packet instructions. Drain well and place in a
large mixing bowl.
Add remaining ingredients to the bowl and mix well.
Pour dressing over salad and toss well.
Serve and enjoy.
