Beetroot & Carrot Salad

Ingredients:
12 oz beetroot, peeled, trimmed, & grated
12 oz carrots, peeled, trimmed, & grated
¼ cup fresh parsley, chopped
1 tbsp red wine vinegar
2 tbsp olive oil
2 tsp cumin seeds
2 shallots, chopped
Directions:
Heat oil in a pan over medium heat.
Once the oil is hot then add cumin seeds and cook for 30 seconds.
Remove pan from heat. Add remaining ingredients to the pan and mix well.
Serve and enjoy.
