Banana and Quinoa Casserole

Cooking time: 1 hour and 20 minutes
Servings: 8
Ingredients:
3 cups bananas, peeled and mashed
¼ cup pure maple syrup
¼ cup molasses
1 tablespoon cinnamon powder
2 teaspoons vanilla extract
1 teaspoon cloves, ground
1 teaspoon ginger, ground
½ teaspoon allspice, ground
1 cup quinoa
¼ cup almonds, chopped
2 and ½ cups almond milk
Directions:
In a baking dish, combine the bananas with the maple syrup, molasses and
the rest of the ingredients, toss and bake at 350 degrees F for 1 hour and 20
minutes.
Divide the mix between plates and serve for breakfast.
