Baked Shrimp Mix

Ingredients:
4 gold potatoes, peeled and sliced
2 fennel bulbs, trimmed and cut into wedges
2 shallots, chopped
2 garlic cloves, minced
3 tablespoons olive oil
½ cup kalamata olives, pitted and halved
2 pounds shrimp, peeled and deveined
1 teaspoon lemon zest, grated
2 teaspoons oregano, dried
4 ounces feta cheese, crumbled
2 tablespoons parsley, chopped
Directions:
In a roasting pan, combine the potatoes with 2 tablespoons oil, garlic and the
rest of the ingredients except the shrimp, toss, introduce in the oven and bake
at 450 degrees F for 25 minutes.
Add the shrimp, toss, bake for 7 minutes more, divide between plates and
serve.
