1 avocado, peeled, pitted and mashed
A pinch of salt and black pepper
2 whole wheat bread slices, toasted
½ teaspoon lime juice
1 persimmon, thinly sliced
1 fennel bulb, thinly sliced
2 teaspoons honey
2 tablespoons pomegranate seeds
In a bowl, combine the avocado flesh with salt, pepper, lime juice and the
cheese and whisk.
Spread this onto toasted bread slices, top each slice with the remaining
ingredients and serve for breakfast.
