Ingredients:
2 avocados, peeled, pitted and roughly chopped
1 tablespoon sun-dried tomatoes, chopped
2 tablespoons lemon juice
3 tablespoons cherry tomatoes, chopped
¼ cup red onion, chopped
1 teaspoon oregano, dried
2 tablespoons parsley, chopped
4 kalamata olives, pitted and chopped
A pinch of salt and black pepper
Directions:
Put the avocados in a bowl and mash with a fork.
Add the rest of the ingredients, stir to combine and serve as a morning
spread.
